Indulge your bacon cravings with this sinfully delicious jam. Use this to make a juicy burger even more awesome or spread it on top of pancakes and toast!
Makes 3 cups
Ingredients:
750 grams bacon slices
3 large white onions, sliced
6 cloves garlic, peeled
1/2 cup apple cider vinegar
3/4 cup light brown sugar
3/4 cup strong black coffee
1/2 cup maple syrup
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon cinnamon
1/4 cup water, if needed

1 Cut bacon slices into 1/4-inch-thin strips. Transfer bacon to a large pot.
2 Cook bacon over medium-high heat, stirring frequently until browned. Transfer to a strainer or a plate lined with paper towels. Drain all but 2 tablespoons of the bacon drippings. Set cooked bacon aside.
3 Place pot back over medium-high heat. Add onions and garlic. Mix well and continue to cook for about 8 minutes or until onions are translucent.
4 Combine the remaining ingredients in a large bowl. Add to the pot, stir, then turn down heat to low. Let simmer, stirring frequently
5 Add browned bacon and stir to make sure that it doesn’t stick to the bottom. If the mixture is drying out too much, add cup water. when the onions are soft and the liquid is thick and syrupy, take the pot off the heat and let stand for 5 minutes.
6 Transfer the contents of the pot to a food processor fitted with a blade. Pulse several times until the jam reaches your preferred consistency.
7 Divide jam among sterilized containers. Serve warm with toast or store in the refrigerator for up to one month.
