STEP 1 Cut bacon slices into 1/4-inch-thin strips. Transfer bacon to a large pot.



STEP 4 Combine the remaining ingredients in a large bowl. Add to the pot, stir, then turn down heat to low. Let simmer, stirring frequently.



STEP 5 Add browned bacon and stir to make sure that it doesn't stick to the bottom. If the mixture is drying out too much, add cup water. when the onions are soft and the liquid is thick and syrupy, take the pot off the heat and let stand for 5 minutes.



STEP 6 Transfer the contents of the pot to a food processor fitted with a blade. Pulse several times until the jam reaches your preferred consistency.
